Gochujang Fried Rice

Transform leftover rice into a bold and flavour-packed meal with this easy Gochujang Fried Rice. Made with Sloppy Chans Gochujang, Light Soy Sauce, Sesame Oil and Sesame Seeds, this spicy Korean-inspired dish is ready in just 20 minutes.

  • 4 cups cooked jasmine rice (preferably day-old)
  • 2 tbsp Sloppy Chans Gochujang
  • 1 tbsp Sloppy Chans Light Soy Sauce
  • 1 tsp Sloppy Chans Sesame Oil
  • 1 tbsp Sloppy Chans Peanut Oil
  • 2 cloves garlic, finely chopped
  • 1 small onion, diced
  • 1 carrot, finely diced
  • 1 cup frozen peas
  • 2 eggs, lightly beaten
  • 2 spring onions, sliced
  • 1 tbsp Sloppy Chans White Sesame Seeds
  • Fresh coriander for garnish (optional)

Let's get cooking

Method

Step 1

Whisk together the Sloppy Chans Gochujang and Light Soy Sauce until smooth.

Heat the Sloppy Chans Peanut Oil in a large wok or frying pan over medium-high heat.

Add the onion and carrot and stir-fry for 3 minutes until softened.

Add the garlic and cook for another 30 seconds until fragrant.

Push the vegetables to one side of the pan and scramble the eggs until just cooked.

Add the cooked rice and stir well to combine with the vegetables and egg.

Pour over the Gochujang sauce and stir-fry for 2 to 3 minutes until every grain of rice is coated.

Stir through the peas and cook for another minute.

Finish with Sloppy Chans Sesame Oil.

Top with sliced spring onions, Sloppy Chans White Sesame Seeds and fresh coriander before serving.

Chef's Tip

Day-old rice gives the best texture for fried rice because it is firmer and less sticky. If using freshly cooked rice, spread it onto a tray and chill it for 30 minutes before cooking.
