Let's get cooking
Pat the pork belly dry with paper towel and score the skin, taking care not to cut into the meat.
In a bowl, combine the Sloppy Chans Chinese Five Spice, Light Soy Sauce, Shaoxing Cooking Wine, Sesame Oil, Peanut Oil, garlic, ginger, brown sugar and white pepper.
Rub the marinade evenly over the meat side of the pork, avoiding the skin.
Leave the pork to marinate for at least 2 hours or overnight in the refrigerator.
Pat the skin dry, then rub it with the coarse salt and brush lightly with the white vinegar.
Preheat the oven to 220°C.
Roast the pork for 30 minutes until the skin begins to blister.
Reduce the oven temperature to 180°C and continue roasting for a further 50 minutes until the pork is tender and the crackling is crisp.
Allow the pork to rest for 10 minutes before slicing.
Serve with steamed jasmine rice and stir-fried greens.
